In 2022, Chef Gustavo’s journey led him to the esteemed Swan & Dolphin Resort, where he assumed the role of sous Dolphin Restaurant chef at Todd English’s Bluezoo. In a decisive fusion of his entrepreneurial spirit and culinary expertise, Chef Gustavo ventured into the realm of business ownership in 2015, co-founding an ice cream company in the United States. Post-graduation, Chef Gustavo honed his skills in his family’s retail business, sharpening his managerial and administrative acumen while continuously refining his culinary craft. Fueled by an unwavering passion for the culinary arts, he resolved to pursue a professional career in gastronomy.

Driven by an unyielding quest for culinary excellence, Chef Gustavo ventured to Melbourne, FL, where he served as a private chef, delivering bespoke dining experiences. This annual event in the fall features hands-on food and beverage seminars, a culinary festival featuring food and drink tastings from the resort’s restaurants, live music, and award winning culinary treats.
